Recipe:
1 cup oat flour
1 scoop protein powder of choice (I used Vivo Life, Chocolate Ritual)
1 tbsp ground flax seeds
3 tbsp water
-start by making your flax egg. whisk the flax with water and let sit for 5-10 minutes until it thickens.
-grind oats into oat flour using a blender and combine with protein powder
-pour water in, mixing 1/4 cup at a time until it reaches a pancake batter consistency
-add your flax egg
-warm a nonstick pan up to medium heat and pour pancake batter in, 1/4 cup at a time or to desired size. cover and cook on medium until pancake can flip (top will have bubbles and will look partially solid).
-repeat until all better is used
-top with almond butter, fruits, tahini, chocolate chips, berries, etc. chef’s choice 🙂
